Kodiak Power Cakes - Product Review

I am doing a product review for Kodiak Power Cakes. This is a high protein flapjack & waffle mix. I am not a fan of store bought mixes, especially pancake mixes. They are expensive and full of additives, so when I found this one I just had to try it out.

It was delivered a couple days ago, but I had just made a batch of my homemade oatmeal pancakes that we needed to finish up before trying this out. Number One finished the last oatmeal pancakes for breakfast yesterday along with some Copycat Jimmy Dean Beef Breakfast Sausage. (Blog Post Coming Soon)

Checkout the ingredients.

It comes with three 24 Oz bags for a total of 4.5 lbs.
This is great for maintaining freshness.

You can add more protein by adding milk and or eggs.
It is also a stand alone mix by adding water only.

I chose the water and egg method. I made a small batch this time. I usually make extra pancakes for freezing or to use for a quick breakfast throughout the week. Saves lots of time.

I chose the shaker method for mixing. It is a great way to store extra batter in the fridge if you don't want to cook it all at once. For those of you who buy pancake mix in a plastic shaker at the store using a jar is a great money saving method.

Shake! Shake! Shake! Put the dry mix on the bottom, so the dry mix doesn't stick to the lid and rim of the jar.

Heat up your favorite pancake pan with a little butter or oil.
I used my small griddle.

Pour your batter onto your heated griddle.

Turn as soon as you see bubbles.

Do the press test. Press your fingertip into the pancake, if it bounces back it is done.

These are light and fluffy. We ate them with a little melted butter right out of the pan. No syrup needed. They have great flavor.

This was the second batch. Number One finished them off with chocolate syrup.

I have to say that this is by far the best tasting and healthy store bought pancake mix that we have ever had. If you are looking for a healthier store bought alternative, this is it. We will be adding this to our grocery list for sure.

Chicken And Dumplings-Making Dumplings Out Of Copycat Bisquick Baking Mix

I made chicken and dumplings using Copycat Bisquick Baking Mix. You can find the recipe here:
Copycat Bisquick Baking Mix

I made the chicken stock out of a chicken carcass from a rotisserie chicken that Number One made a few days before. It still had plenty of meat on the bones.

Remove the chicken carcass from the stock. Let cool somewhat before you pull the chicken off the bones unless you have really tough fingertips.

This is how much chicken was left on the carcass.

Season the stock with salt and pepper and return to a boil.

Mix milk with the homemade baking mix until

you get a biscuit consistency.

Drop dumplings from a spoon into the boiling stock. Do not stir or your dumplings will fall apart into little pieces.

Cover and continue cooking on low heat for 20 minutes.

Add chicken.

Cook until desired consistency. I like mine pretty thick and hearty.

This is a simple, but delicious meal. You can also use a turkey carcass to make turkey and dumplings. Dumplings can be added to any soup to make a heartier soup and it will also provide more servings at mealtime.

Enjoy,

Mrs. Smith

Copycat Bisquick Baking Mix-Walmart Is Out Of Stock...

I have been making this baking mix for years. Bisquick is so expensive. It cost nearly $9 for a large box if you can find it in stock. I just looked online and it is out of stock.

The good news is that you can make it at home for a fraction of the cost. It stores well in an airtight container for up to 10 to 12 weeks. A whole wheat version can be made using half whole wheat flour and half all-purpose flour.

Ingredients

4 1/4 Cups All-Purpose Flour

3/4 Cup Powdered Milk

1 1/8 Cups Shortening

4 1/2 Tsp Baking Powder

1 1/2 Tsp Salt

1 Tsp Cream Of Tartar

2 Tbs Sugar

1/2 Tsp Baking Soda

Instructions

Sift all dry ingredients together in a large bowl. Add shortening. Use a pastry blender to blend into a very small crumb texture. Store in an airtight container. Use in place of Bisquick or other store bought baking mixes.

That's it. Simple and cost saving. I hope this helps you in your quest to replace another out of stock item at the grocery store.

Hoar Frost..

Fog started rolling over the mountains yesterday afternoon. I took some pictures yesterday, but I had no idea that it would make such a beautiful sight this morning.

It was seven degrees this morning, so I tried taking pictures through the windows, but it did not do it justice. I braved the cold and went outside to take close ups of the frost. It only formed on the side that the wind was blowing on.

There was a large heard of pronghorn antelope in the distance. The were in the fog, so they were hard to see. Soon the sun started breaking through the fog making it even more beautiful. It looked like it had snowed.

Pretty soon the sun overcame the fog.

Here are a few extra pictures that I took last week, enjoy...

This photo is out or order, but it was the last of the fog burning off this morning.

What little snow we had is now gone.
