This is an easy recipe to make. It doesn't require you to deep fry your chicken in oil and this saves money. It also doesn't make your home smell like a doughnut shop for days and it tastes great. I have made this or a form of this recipe twice. The only difference in the recipes was the spices, so feel free to improvise. I like the spices in this recipe. It reminds me of homemade stuffing because of the sage in it.
|Mix butter and oil in a jelly roll pan and melt in a 375* oven.|
|I make my own cracker crumbs.|
|Add all dry ingredients in a large bag and shake to mix.|
|Roll each piece of chicken in butter/oil mixture. Place chicken, three at a time, into baking mixture bag and shake. Place chicken back onto jelly roll pan skin side down. Bake for 45 minutes.|
|Turn chicken over and bake for another 15 minutes.|
|For more yummy goodness, make gravy out of the pan drippings and serve over mashed potatoes. Serve with a salad, a hot vegetable side dish and some homemade bread.|
