|Ingredients: 1 chopped onion, 2 chopped garlic cloves, bay leaf, |
4 tablespoons olive oil, 2 cans diced tomatoes, 1 tablespoon brown sugar,
3 slices white bread or 3 cups plain croutons, 2 cups chicken stock
|Saute onion, garlic and bay leaf in 2 tbs olive oil until translucent.|
(3 to 5 minutes)
|Add tomatoes, sugar and bread. Cook until bread breaks down.|
(about 5 minutes)
|Remove bay leaf. Add stock and 2 tbs oil Mix with stick blender or|
mix in blender until smooth.
Becareful, it's hot.
|Salt and pepper to taste.|
|Cook on low until until desired consistancy is reached.|
Serve with croutons, bread or crackers.
