Easy Homemade Tomato Soup

Ingredients: 1 chopped onion, 2 chopped garlic cloves, bay leaf,
4 tablespoons olive oil, 2 cans diced tomatoes, 1 tablespoon brown sugar,
3 slices white bread or 3 cups plain croutons, 2 cups chicken stock

Saute onion, garlic and bay leaf in 2 tbs olive oil until translucent.
(3 to 5 minutes)

Add tomatoes, sugar and bread. Cook until bread breaks down.
(about 5 minutes)

Remove bay leaf. Add stock and 2 tbs oil Mix with stick blender or
 mix in blender until smooth.
 Becareful, it's hot.

Salt and pepper to taste.

Cook on low until until desired consistancy is reached.
 Serve with croutons, bread or crackers.
