These are our favorite pancakes. Plan ahead because the oats need to soak overnight in buttermilk. I make my own buttermilk by adding vinegar or lemon juice to milk or powdered milk. I do not use enough buttermilk to warrant buying it at the store. It's easy to make and only takes two ingredients.
Buttermilk
1 C Milk
1 Tsp Vinegar or Lemon Juice
Add milk and vinegar or lemon juice together and let sit for 10 minutes. Use in any recipe that calls for buttermilk.
Oatmeal Pancakes
Makes 6 healthy sized pancakes
1 Cup Oats
1 Cup Buttermilk
1 Egg
1 Tbs Oil
1/4 C flour
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1 Tbs Sugar
1/4 Tsp Salt
Butter
Maple Syrup, Honey or Pancake Syrup
I like to eat these plain as a snack if we have any leftovers. |
Soaked oats |
Put soaked oats in a blender. |
Add 1/4 Cup of flour. |
Add 1 Tbs sugar, 1/2 tsp baking powder, 1/2 tsp baking soda and 1/4 tsp salt to the mixture. |
Add 1 Tbs oil. |

Blend until smooth. |
Cook on a seasoned griddle or use an oiled skillet on medium heat. |
Flip over when bubbles appear in the batter |
Add a pat of butter to the top and continue cooking until the other side is browned. |
Serve with butter and maple syrup or whatever type of syrup you prefer. |
