We were blessed with five dozen eggs and a package of kiwis from the neighbors after they inadvertently left them behind in their fridge after purchasing them for a trip. I had some eggs from our own hens that needed to be preserved. Our hens are no longer laying. They will start again in the Spring. During egg season I use this method of preservation to get us through the Winter months after I run out of fresh eggs.

There are several ways to preserve eggs. This method works best for me, since we have space in our freezer. I have tried freezing eggs in the shell and whole cracked eggs. I don't like either one of these methods. The eggs do not mix or cook well. They were useless for me, so I feed them to the pups.

Remove as much air as possible to ensure the eggs will last in the freezer. Each egg weighs approximately 2 ounces. I freeze the bags flat, so I can easily divide the eggs when they are frozen. Most of my recipes use two eggs, so I just break the mixture in half.

If you have your own hens that lay an abundance of eggs or come across an egg sale, I encourage you to preserve the eggs to use at a later date. You can scramble the eggs, use the eggs in any recipe that calls for eggs like cakes, cookies or quiches. I use eggs in my homemade bread to increase the nutritional value and raise the protein level.
