Butter Cookies - Only Three Ingredients...

The butter cookies that are so popular this time of the year just don't taste good anymore and haven't for years. It's such a shame too. There are a lot of foods that just don't have the same flavor that they use to have. Corporate greed will always come before flavor. Natural flavorings mean fewer real ingredients and a longer shelf life to the detriment of consumer health.

I like these cookies because they don't have a lot of sugar in them, it is a simple recipe to prepare, and they taste great. Add finely chopped pecans to make pecan sandies. The storebought pecan sandies do not taste good at all. They also cost nearly $4 for 11.3 oz these days. I can make a 1 1/2-pound batch of cookies for around $2. 


I use washable reusable parchment paper for baking cookies.





Butter Cookies

2 Cups Flour, sifted

1/2 Cup Powdered sugar

1 Cup Butter, softened


Add butter to a mixing bowl, beat for 3-4 minutes. Add powdered sugar. Beat until the mixture is light and fluffy. Add flour and mix for an additional 3 minutes. Form into a dough ball. Roll into a log. Wrap in plastic wrap. Refrigerate for at least one hour or in the freezer for 30 minutes. Slice in 1/2-inch slices and place on a parchment paper covered cookie sheet. Bake in a preheated 350-degree oven for 12-15 minutes until lightly browned on the bottom. Let cool completely before serving.
