Grandma Ruby's Apple Bread Recipe...
A storm moved in late this afternoon and dropped the temperature over ten degrees, so I jumped at the opportunity to use the oven. I had sliced some apples, put them in water and stored them in fridge the other day while I was gathering up fragments. I had hoped to use them sooner, but it never cooled off like it was supposed to.
I opened all the windows to let the storm's breeze blow through the house while I was baking. I could smell the rain and hear the thunder in the distance.
I assembled all the ingredients, measured out the amounts and was prepared to put it in the mixer, but before I started the batter I wanted to ready my baking pans, however, I have unfortunately misplaced my large loaf pans, so I just used my cake pan.
Grandma Ruby baked her apple bread in empty coffee cans. She often quoted the words "Waste Not, Want Not". She grew up in the Great Depression on a small farm. They did not let anything go to waste. Everything was precious and their survival depended on what most people now would consider trash.
Preheat oven to 350*
Mix together:
4 Cups chopped apples
1 Cup vegetable oil
2 Cups sugar
4 Eggs
2 Tsp Vanilla Extract
Add:
2 Cups lightly chopped walnuts or other nuts, optional
4 Cups all purpose flour
1/2 Tsp salt
2 Tsp Baking soda
Grease two long loaf pans or a cake pan. Pour batter into pan(s). Bake at 350* until done. Use the toothpick test to check for doneness.
The batter makes a wonderful golden brown sweet crust on the outside and a moist crumb on the inside. |
The sun is setting and the light and rain made a small rainbow in the distance. The perfect ending to a beautiful Sabbath. |
