Saute onion, garlic and bay leaf in 2 tbs olive oil until translucent. (3 to 5 minutes) |
Add tomatoes, sugar and bread. Cook until bread breaks down. (about 5 minutes) |
Remove bay leaf. Add stock and 2 tbs oil Mix with stick blender or mix in blender until smooth. Becareful, it's hot. |
Salt and pepper to taste. |
Cook on low until until desired consistancy is reached. Serve with croutons, bread or crackers. |
