We ended up with a few more inches of snow that is going to blow with the rest of the snow and cause major drifts. Tonight is going to be -33 degrees along with windy conditions. Temperatures are plummeting right now. I need to go out to the chicken coop one more time before the sun sets.

I did some baking today and made the house nice and toasty. I made kettle pizza, and I baked whole wheat pita bread. I plan on baking sandwich bread and crackers tomorrow. It's been a busy morning but all in all it only took about 40 minutes of prep time to prepare everything. The rest of the time was just waiting for the dough to rise and the baking time. Well worth the effort...

They are starting to deflate.

I may have helped them out a bit by stacking them on top of each other.

I used the rest of the Make-A-Mix Cookery Whole Wheat Baking Mix that I had 
stored in the freezer. I made another half batch to make some crackers
out of tomorrow, and I will store the rest in the freezer.


It's time to go out and check the chickens on more time. The temperature has dropped 10 degrees in about 15 minutes. I hope that everyone is staying safe and warm.

Homemade Whole Wheat Pita Pockets - Make-A-Mix Cookery - Whole Wheat Baking Mix




This is an easy recipe to prepare, and it is nice to have on hand when you are pressed for time.

He does such a nice job.




Just cut in half and stuff with your favorite fillings.

Lunch/Dinner Pitas: Smoked Tuna and Jalapeno Salad Pitas

Breakfast Pita Pockets: Copycat Jimmy Dean Breakfast Sausage with hashbrowns and cheese

This is a versatile whole grain baking mix. It is just the right balance of sweet and savory. I plan on trying a few more of the recipes, like the hamburger buns, in the next few days. The thin wheat crackers taste just like store bought Wheat Thins. I will share the recipes and my other adventures with this baking mix on the blog soon.

Instant Oatmeal Packets (Revised) Copycat Recipe


$19.49 On Amazon, $ Wal-Mart Sold Out, Sam's (Shrinkflation 40 count)

There are many ways to save money and still enjoy the convenience of convenience foods without giving up healthy food choices. When you make your own homemade mixes, you control what goes into them. Your wallet and your health will thank you. A friend of mine turned me onto some older recipe books (70's) that promotes making your own mixes. These are easy recipes and a lot less expensive than the store-bought alternatives.


 



Instant Oatmeal Packets

Blend in blender
2 Cup regular oats until powdery.
You will need 10 Zip-lock bags: Each Bag will make 1 serving.

Combine
1/4 cup regular oats
2 Tablespoons Powdered oats (you just made those in the blender)
1/3 tsp salt

To Use:
Empty packet into bowl and add 1/2 cup boiling water and stir until thick.

Variations to each packet add:

Apple-Cinnamon
: 1 Tablespoon Sugar, 1/4 teaspoon cinnamon, 2 Tablespoon chopped dried apples

Cinnamon-Spice:  1 Tablespoon Sugar, 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg

Raisins & Brown Sugar: 1 Tablespoon packed brown sugar, 1 Tablespoon raisins

Wheat Germ: 2 Tablespoons of any kind wheat germ
