What's Cooking?

I thought that I would share what I cooked for dinner last night and what I did with the leftovers this morning for Number One Husband's breakfast. He snapped the pictures while I was busy cooking, Unfortunately, he took pictures of me in my pajamas. I got tickled when I saw the pictures of me in my colorful mismatched pajamas. The pictures of me in my winter themed pajama pants and my tie-dye top with my ombre colored cardigan reminded me to look in the mirror more often... 


Skirted Cow, Gritts, Italian Green Beans and Buttered Toast

I used the smokey hamburgers that Number One Husband grilled
for the Skirted Cow.


After we finished eating, I buttered a bowl.

I put the leftover grits in the bowl.

I put a lid on the grits and stored them in the refrigerator
overnight.

I removed the grits from the bowl this morning. They weren't as firm as 
corn mush would be, but it worked.

I heated up a little butter in a skillet.

I added the chilled grits to the pan.

I fried both sides.

I topped it with grated cheese.

And I served them up. Number One Husband
enjoyed it with the melted cheese, but I would 
have topped mine with butter and maple syrup.

Homemade Ketchup... Save! Save! Save!



Have you seen the cost of ketchup at the grocery store? Sure you have. This is a tasty inexpensive recipe, less than $1, especially if you make your own sugar syrup. This is a simple and easy recipe.  

Ketchup Recipe


6 Oz can tomato paste
1/2 c light corn syrup (make your own sugar syrup)
1/2 c white vinegar
1/4 c water
1 Tbs sugar
1 Tsp salt
1/4 Tsp onion powder
1/8 Tsp garlic powder

Combine all ingredients in saucepan. Simmer over low heat for 20 minutes. Stir often. Cover, cool and then chill in a covered container in the refrigerator. Makes 1 1/2 cups. I often double this recipe. I store it in an old clean ketchup bottle.

Giant Valentine's Day Hamburger With Homemade Ketchup


Little more bun than burger...

Five meals with homemade fries and ketchup...

We celebrated our Anniversary on Valentine's Day by creating a monster burger made from lean ground chuck, ground smoked bacon ends and pieces and a custom homemade bun. I found a grape Fanta made with real sugar at a local store to toast our 27 years together. Along with home cut fries and home spun ketchup we had a feast fit for royalty or at least we thought so...

Many many years ago in Fort Smith Arkansas we visited a burger joint, known for their giant hamburgers, called Ed Walker's Drive In. Now our burger was nothing like the 5 lb behemoth Ed Walker serves up. We were young and naive, so we ordered the large chili cheese fries too. People were gawking at the enormous amount of food on our table and to be honest we were too. Needless to say, we took home a doggie bag. Now, Number One created the burger with the ground bacon. I don't think they serve it that way at Ed Walker's.

Ketchup Recipe
