I was recently at Sam's club and walked by trays of 5 dozen count cookies for $19.98. Wow! $20 Bucks for cookies. This recipe makes 6 dozen cookies with fewer ingredients for a lot less money and they taste better. Feel free to change up the recipe using other kinds of nuts and berries or omit them altogether. I froze a portion of the dough to bake at a later date.
Cranberry Walnut Oatmeal Cookies
3/4 C Packed Brown Sugar
1/2 C Sugar
3/4 C Shortening
1 Egg
1/4 C Water
1/2 Tsp Vanilla
3 C Oatmeal
1 C All-Purpose Flour
1 Tsp Salt
1/2 Tsp Baking Soda
1 C Cranberries
1 C Chopped Walnuts
Cream together wet ingredients and sugars. Add dry ingredients and mix well. Drop dough with a spoon (About the size of a small egg) onto a baking sheet two inches apart. Bake in a pre-heated oven at 375 degrees for 9-11 minutes until lightly browned. Remove from baking sheet and let cool on a wire rack. Store in a covered dish.
Enjoy!
