This cake is extremely flavorful, rich and moist. It is simple to make using a box cake mix. I used a Devil's food cake mix. The frosting is similar to pecan pralines with a coconut twist. I used walnuts, because that is what I had on hand.
Tornado Cake
Ingredients:
1 Box cake mix (Butter, Yellow, Chocolate, German or Devil's food)
Frosting:
1 Stick of butter
1 Cup of sugar
2/3 Cup of evaporated milk
1/2 Tsp vanilla
1/2 Tsp salt
1 Cup nuts
1 Cup sweetened coconut
Prepare cake mix according to the directions on the box. In a medium saucepan, bring butter, sugar, evaporated milk, vanilla and salt to a boil. Add nuts and coconut to the mixture and mix well. Reduce heat to medium and boil for 5 minutes stirring frequently. Poke holes in the baked cake using the end of a wooded spoon handle or something similar. Pour cooked frosting evenly over the cake. Let cool before serving.
