I woke up thinking about potatoes this morning. I had 10 medium sized potatoes when we started this challenge, plenty of onions, some sad looking celery and sweet peppers that needed to be used up. I decided on calico potatoes and leftover biscuits and gravy.

I soaked some cranberries in hot water for baked oatmeal. Breakfast twice in one day, why not? |

I cooked the potatoes in the beef fat, salt pepper and cayenne for before adding the peppers, celery and onions. |

This was a simple and easy pantry meal. I had homemade biscuit dough in the freezer and leftover beef sausage gravy in the refrigerator. The calico potatoes were the proverbial cherry on top. I plan on making more freezer biscuits and sharing the recipe here on the blog.
