Old Fashioned Southern Style Creamy Grits...Recipe

 

Homemade toasted wheat bread, homemade chicken breakfast sausage and grits served with butter and maple syrup.

2 Cups Water

2 Cups Milk

1 1/4 Tsp Salt

1 C Old Fashioned Grits

In a medium saucepan mix 2 cups of water, 2 cups of milk, 1 1/4 teaspoons of salt and 1 Cup of old fashioned grits. Mix very well with a whisk. Turn on heat to medium. Bring grits to a simmer and reduce heat. Cook for 23 minutes, stirring every few minutes to keep from sticking and aid in the formation of the starches. Once cooked, move fast to add any additions. Grits will firm up as they cool down.

Options: 

Top with grated cheese or add a cup of grated cheese to the grits a couple minutes before the grits are finished cooking.

Serve with milk, butter and sugar for a sweet breakfast meal or serve with butter, salt and pepper for a savory side dish.

Chill grits overnight in a buttered loaf pan or dish. Remove firm grits from the container, slice and fry in butter on both sides until browned. Serve with maple syrup or honey. I like to do this with leftover grits.

Turn on the heat and whisk, whisk and whisk some more (for a couple minutes). This helps form the starches that makes the grits so creamy. Bring it up to a simmer and reduce the heat. Every Southerner knows good grits cook for 23 minutes, low and slow, stirring every few minutes.
