I created this recipe to use up a can of Pumpkin Pie Mix that I had in my pantry. We don't really care for pumpkin pie, but we like pumpkin. I adapted my Grandma Ruby's Apple Bread recipe to make this Pumpkin Spice Walnut Bread.

2 Eggs
1 Cup Sugar
1/2 C Oil
Add:
2 1/4 C Flour
1/4 Tsp Salt
1 Tsp Baking Soda
2 C Pumpkin Pie Mix
1 C Chopped Walnuts
1 Tsp Vanilla
Mix well. Pour into a lined or well greased loaf pan. Dust top with chopped walnuts and a spoonful of sugar.(Optional) Bake in a pre-heated 350* degree oven until a toothpick comes out clean. (about 1 hour 15 minutes)
I prefer to line my cast iron bread pans with parchment paper when I am baking anything in them other than regular yeast breads. |
This flavorful sweet bread would be a great make ahead Thanksgiving breakfast addition. This recipe can be easily made into muffins or individual mini-loaves. Enjoy!
