I decided to try making Kofta for the first time. I was excited to try out this recipe and since we were in between meals, we only had the Kofta patties as a snack. They were delicious. I placed the uncooked mixture in the refrigerator. It's amazing how much Kofta one cup of lentils makes. These patties will make a great filling for sandwiches or stuffed pitas.
Lentils are nutritious and are well known for their health benefits. They are full of antioxidants, fiber and are an anti-inflammatory food. They are a fast-cooking legume compared to other types of beans which saves on energy costs.

Kefir Tzatziki Sauce |
Kofta
1 C Lentils, washed and drained
Boiling water
6 Cloves Garlic
1 Cup Bread, torn into pieces
1 Bell Pepper, chopped
1 Onion, chopped
1/4 C Parsley, chopped
1 Tsp Cumin
1 Tsp Coriander, crushed or ground
1 Tsp Chili Flakes
1/2 Tsp Black Pepper
1/2 Tsp Salt
Oil for frying
Wash and drain lentils. Cover with at least two inches of boiling water. Cover and let soak for three hours. Drain lentils. Place lentils into a food processor. Add Peppers, onions and parsley to the lentils. Process mixture until it resembles wet coarse cornmeal. Add spices. Mix well. Form into patties and fry in a small amount of oil until browned on both sides. Serve with your favorite sauce, vegetables, humus and naan.
