I made chicken and dumplings using Copycat Bisquick Baking Mix. You can find the recipe here:
Copycat Bisquick Baking MixI made the chicken stock out of a chicken carcass from a rotisserie chicken that Number One made a few days before. It still had plenty of meat on the bones.

Remove the chicken carcass from the stock. Let cool somewhat before you pull the chicken off the bones unless you have really tough fingertips. |

This is how much chicken was left on the carcass. |

Season the stock with salt and pepper and return to a boil. |

Mix milk with the homemade baking mix until |
|
you get a biscuit consistency. |

Drop dumplings from a spoon into the boiling stock. Do not stir or your dumplings will fall apart into little pieces. |

Cover and continue cooking on low heat for 20 minutes. |

Add chicken. |
|
Cook until desired consistency. I like mine pretty thick and hearty. |
This is a simple, but delicious meal. You can also use a turkey carcass to make turkey and dumplings. Dumplings can be added to any soup to make a heartier soup and it will also provide more servings at mealtime.
