Meal Prep For Two - Freezer Meals - Day 3

We didn't do nearly as much today as yesterday, but we accomplished a few things as far as meal prepping goes. I needed to recover from the day before.

We woke up to a couple of inches of surprise snow on the ground.
I prepared chicken breasts for grilling.



Number One will slice the chicken on the slicer. It is our homemade lunch meat. It is a healthy alternative to lunch meat, it tastes a lot better, and it is less expensive too. Everything has to cool off before it can be packaged for freezing. 

Lunch: Grilled creole chicken sandwiches with fermented kraut. 

Blurry grilled sliders. I just threw these on the grill since it was on. We will eat these on biscuits for breakfast.

This was a very large pot roast from a cow that the neighbor had butchered, and she gave it to us along with 6 others. This was the last one. I decided to make our favorite, Carne Guisada.

I like to Serve it over rice, mashed potatoes or with a warm tortilla.
