I saw these Carrot Dogs on YouTube, and I was intrigued by the simplicity of the recipe. They looked so good. I always have carrots that need to be used up before they grow legs and walk away. I had all the other ingredients on hand too. We were going to grill out anyway, so I thought why not...
I was pleasantly surprised. They are good and actually taste like hotdogs. The texture was a little different, but who cares? They are less processed and healthier than the vegan hotdogs from the grocery store. The cost is minimal compared to the cost of vegan or regular hotdogs.
I picked carrots that were similar in size and cut them the length of a hotdog bun. I peeled the carrots and rounded the corners. I used the ends that I cut off to use for a taste test. |
Boil the carrots for 12-15 minutes until soft on the outside but firm on the inside. Do not overcook. They will finish cooking when grilled. |
Keep in mind that this recipe has a 12–24-hour marination time. |
Use a storage bowl that has a leakproof lid and is long enough for the carrots to marinate in. |
Place the hot carrots in the marinade. Place on the lid and give them a shake to coat the carrots. Let them marinate in the refrigerator for 12-24 hours. |
After 12-24 hours, the carrots are ready to be grilled. |
Grill just like a regular hotdog. They can also be cooked inside on the stove in a grill skillet. Serve on hotdog buns with your favorite condiments. |
Carrot Hotdogs
4 Medium Carrots, peeled and cut into bun length
1/4 cup rice vinegar
1 tbsp maple syrup
1/4 cup liquid aminos
1 tsp smoked paprika
1 tsp yellow mustard
1 tsp garlic powder
1 tsp onion powder
2 garlic cloves finely chopped
1 tsp liquid smoke
Cook in boiling water 12 -15 minutes depending on the size of the carrots. Mix marinade ingredients in a bowl with a leakproof lid. Add the hot carrots to the marinade and shake to coat. Marinate for 12 to 24 hours. Marinade no longer than 3 days. Cook on the grill or in a cast iron grill skillet until grill marks form on the carrots. Flip and cook the other side.
Enjoy,
Mrs. Smith
